Bruschetta Stuffed Chicken Recipe

Ingredients

  • 1 can (14-1/2 oz.) diced tomatoes, undrained
  • 1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 6-8 boneless, skinless chicken breasts
  • 2 tsp. dried basil leaves
  • salt, pepper, dash of garlic powder
  • 1/2 cup low fat shredded Skim Mozzarella Cheese

Preparation

  1. Preheat oven to 400°F. Place tomatoes in medium bowl. Add stuffing mix, water, garlic, and any other seasonings; stir just until stuffing mix is moistened and tomatoes are in smaller pieces. Set aside.
  2. Place chicken in plastic bag and pound chicken with meat tenderizer until chicken is 1/2-1/4 inch thick. Scoop stuffing mixture into center of chicken. Roll them and place in 13x9 inch pan with seam down.
  3. Bake 35 minutes, then add shredded cheese on top for last 5 minutes or until chicken is cooked through.
