Heart Healthy Fettuccine Alfredo Recipe

Ingredients

  • 2 cups white beans
  • 1 1/2 cups unsweetened soy milk
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 cup low fat parmesan cheese
  • 1/2 cup dried tomatoes
  • Italian parsley (optional)
  • 1/2 box (8 ounces) of high fiber fettuccini or spaghetti noodles, cooked and drained

Directions

  1. Begin heating a large pot of water for cooking the pasta (follow the directions on the box). Once the pasta is cooked, strain it and set it aside.
  2. In a blender, puree the beans, soy milk, garlic powder, and salt until very smooth and creamy.
  3. In a large sized pot, bring the bean and soy milk mixture to low-medium heat for 10 minutes. Stir occasionally.
  4. After 10 minutes, remove pot from heat and stir in the grated cheese. Adjust the flavor of the sauce as desired
  5. You can add basil, cooked chicken or shrimp to the mixture if desired.
  6. Add the cooked pasta to the bean mixture.
  7. Garnish the pasta with rehydrated tomatoes, and minced Italian Parsley.

***Replace pasta with spinach if you want to decrease carbohydrate intake.
